Strawberry Bon Bons







How do ya like those teeth marks on that last photo ey? hah! Carrying on with Strawberry month, I give you the easiest dessert; Strawberry Bon Bons! I loved eating these as a child growing up but noticed they no longer really sell them in the supermarkets any longer (well not in New Zealand anyways)?

All you need is melted chocolate (your preference of Dark, White or Milk, I used Dark), Strawberry ice cream (ripple or bitsy, high end or just your regular local supermarket brand) and as a final flourish, perhaps some crushed toasted pistachios and freeze dried strawberries for sprinkling on top. Scoop out your preferred size ice cream ball (I used a melon baller) and place on a container/tray lined with a sheet of baking paper, then place back in the freezer to firm up a bit more.
Melt your chocolate of choice and let it cool slightly, ensuring that the chocolate remains runny. Then working quickly, dip and roll your ice cream balls around in the melted chocolate with a toothpick or fork, place back on the lined container/tray, and sprinkle your crushed toasted pistachios and strawberry chips. You may need to pop some of the already made bon bons back in the freezer while you go. Once all the bon bons are done, place them back in the freezer for an hour to firm up.

These Strawberry Bon Bons are so easy to make, but ensure you make them on a day when your home is cool. Once they're ready to eat, they're like eating mini balls of Magnum ice cream. Crispy chocolate outer shell and beautiful sweet and creamy strawberry inner. MMmmmm. Change up the toppings with crushed salty pretzels, goji berries, white chocolate chips, honey comb...oh the list goes on...!
